I came across Amy Chaplin's blog, Coconut and Quinoa, via Martha Stewart Living. She posts some really good recipes that prove that food can be special, elegant, and healthy all at once.
Ms. Chaplin is right after my own heart in that she promotes healthful eating that is also tasty. She puts just as much emphasis on deliciousness as she does organic veggies! She also shuns anything processed including canola oil and "health food store contradictions" such as vegan margarine. She'd rather eat butter and so would I!
