I have a lot of mint growing in the garden and a tree full of Meyer Lemon so, marinated swordfish with M. lemon juice, Meyer lemon olive oil, soy sauce, a dash of raspberry balsamic vinegar, mint and garlic, pureed to a fine liquid. For the tomato, avocado salad I did the same with out the soy sauce and added more balsamic and M. lemon olive oil. It was a big hit!
